What’s the secret of great fish and chips?
It’s quite simple, really. No shortcuts, no settling for second best… just great quality ingredients, prepared and cooked by people who care.
We take the finest quality fish, coat it in our own light batter and cook it at high temperatures, in the finest high oleic sunflower oil. This seals in the goodness of the fish, whilst minimising the oil content of the batter.
Most of our fresh fish comes from Devon and Cornwall in the South West, which is known to be one of the best managed fisheries in the UK.
For freshness, our potatoes are chipped throughout the day as we need them. We cut them fat and fry them twice in high oleic sunflower oil. The first fry produces the soft, fluffy centre. We then flash-fry them in order to guarantee crispy chips every time.
Likewise, our mushy peas and most of our side orders, sauces, and puddings are homemade daily in the kitchen, with the same care and attention as we put into our fish and chips. It’s a philosophy that extends to everything we do – and it’s been serving us (and our customers!) very well since 1989.
